Carbohydrates

Most of this carbohydrate is starch, which consists of long chains of glucose known as amylose and amylopectin.

The starch composition also impacts digestion.

High-amylose rice is digested more slowly, leading to more stable blood sugar levels, while sticky rice, being more quickly digested, can cause rapid spikes in blood sugar, particularly concerning for individuals with diabetes.

Fiber

Brown rice contains more dietary fiber than white rice, with 1.6 grams per 100 grams.

The bran, which is removed during the processing of white rice, holds most of the fiber.

This bran consists mainly of insoluble fibers like hemicellulose and contains very little soluble fiber.

Both types of rice have varying amounts of resistant starch, a soluble fiber that promotes gut health by increasing butyrate levels.

Butyrate helps reduce inflammation, improves gut barrier function, and lowers the risk of colon cancer.
